Clean the Oysters
Rinse the fresh Gulf oysters under cold running water to remove any sand or debris. Scrub the shells with a brush to ensure they are clean.

Make Tasso Garlic Butter
In a saucepan over medium heat, melt the unsalted butter. Add the minced garlic and sauté until fragrant, about 1 minute. Stir in the finely chopped tasso ham and cook for another 2-3 minutes until slightly crisp. Remove from heat and mix in chopped parsley, lemon juice, salt, and black pepper.

Prepare the Oysters for Roasting
Preheat your wood oven to a temperature of about 400°F (200°C). Carefully open each oyster using an oyster knife, discarding the top shell. Arrange the oysters on a baking tray or cast-iron skillet.

Add Tasso Garlic Butter
Spoon about 1 tablespoon of the prepared tasso garlic butter onto each oyster, ensuring it covers the meat.

Add Cheese Topping
Sprinkle a generous amount of grated Romano cheese over each oyster.

Place the baking tray or skillet with the oysters into the preheated wood oven. Roast for about 10-12 minutes or until the cheese is melted and bubbly, and the edges of the oysters are slightly curled.
