Prepare Sundried Tomato Pesto

    Blend Ingredients

    In a food processor, combine sundried tomatoes, garlic cloves, pine nuts, Parmesan cheese, olive oil, salt, and black pepper. Blend until smooth.

    Adjust Seasoning

    Taste the pesto and adjust seasoning as necessary, adding more salt or pepper to taste.

Make Balsamic Caviar

    Prepare Balsamic Mixture

    In a saucepan, combine balsamic vinegar and water. Sprinkle agar-agar powder over the mixture and stir well.

    Heat Mixture

    Bring the mixture to a boil over medium heat, stirring constantly until the agar-agar is fully dissolved.

    Form Caviar

    Using a dropper or syringe, drop the mixture into a bowl of ice-cold oil to form caviar. Allow it to sit for a few minutes to set.

Prepare Basil Oil

    Blend Basil and Oil

    In a blender, combine fresh basil leaves and olive oil. Blend until smooth and vibrant green.

    Strain Oil

    Strain the mixture through a fine mesh sieve or cheesecloth to remove solid pieces, collecting the basil oil in a bowl.

    Add salt to the basil oil to taste.

Assemble the Dish

    Warm Burrata

    Gently warm the burrata cheese in a water bath for 5 minutes or until just warmed through.

    Plate the Dish

    On a serving plate, place the warm burrata and spoon generous amounts of sundried tomato pesto over it.

    Top with balsamic caviar and drizzle basil oil around the plate for garnish.
