Burger Preparation

    Prepare the Wagyu Patties

    In a bowl, gently mix the Wagyu beef with salt and black pepper. Form the mixture into two equal patties.

    Cook the Burgers

    Heat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

    Add the Cheese

    In the last minute of cooking, place 2 ounces of Fontina cheese on each patty and cover to melt.

    Prepare the Bone Marrow Aioli

    In a small bowl, mix the bone marrow with mayonnaise until smooth. Season with salt and pepper to taste.

    Assemble the Burgers

    On each brioche bun, spread the bone marrow aioli, add the Wagyu patty with melted Fontina, top with caramelized onions, and add a generous spoonful of bacon jam.

    Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

    In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy. Drain on paper towels.
