Seafood Filling

Cook the Seafood
In a skillet, heat a tablespoon of olive oil over medium heat. Add the Gulf shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat and chop the shrimp into smaller pieces.

Combine Seafood Ingredients
In a large bowl, combine the chopped shrimp, blue crabmeat, mozzarella, and Parmesan cheese. Mix well and set aside.

Cook the Risotto
Add the Arborio rice to the saucepan and stir for 1-2 minutes until the rice is slightly toasted. Gradually add the chicken broth, one cup at a time, stirring frequently until the liquid is absorbed before adding more. This process should take about 18-20 minutes until the rice is creamy and al dente.

Season the Risotto
Once the risotto is cooked, season with salt and black pepper to taste. Allow it to cool slightly before folding in the seafood mixture.

Form the Arancini
Once the risotto has cooled enough to handle, take a handful of the mixture and form it into a ball (about the size of a golf ball). Repeat until all the rice mixture is used.

Bread the Arancini
Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each arancini in flour, dip in the egg, and coat with breadcrumbs.

Fry the Arancini
In a deep skillet, heat vegetable oil over medium-high heat. Fry the arancini in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the fried arancini on a platter. Drizzle with Alfredo sauce and vodka tomato cream sauce, or serve the sauces on the side for dipping.
