Slice the Vegetables
Wash the zucchini and slice it into half-moons, about 1/4 inch thick. Remove the seeds and stem from the red bell pepper and chop it into small pieces. Peel and finely chop the onion and garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.

Add the Zucchini and Bell Pepper
Add the sliced zucchini and chopped red bell pepper to the skillet. Stir to combine with the onion and garlic.

Sprinkle in 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of dried oregano. Stir well to coat the vegetables with the seasonings.
