    Sauté Garlic

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Mix well.

    Simmer the Sauce

    Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for 20-25 minutes, stirring occasionally.

Italian Cheese Blend

    Combine Cheeses

    In a bowl, mix together the shredded mozzarella, grated Parmesan, and shredded provolone cheeses until well combined.

Capellini

    Cook Capellini

    Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt. Add the capellini pasta and cook according to package instructions, usually around 3-4 minutes until al dente.

    Drain and Combine

    Once cooked, drain the capellini and return it to the pot. Add the prepared house marinara sauce and mix gently until the pasta is evenly coated.

Serve

    Plate and Garnish

    Serve the capellini topped with the Italian cheese blend. Optionally, you can broil it in the oven for 2-3 minutes to melt the cheese and create a bubbly topping.
