Method
Preparing the Fish
- 1
Season the Fish
Pat the fresh Gulf fish fillets dry with paper towels. Season both sides of the fillets with salt and black pepper.
- 2
Cook the Fish
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the seasoned fish fillets. Cook for about 3-4 minutes on each side until the fish is golden brown and flakes easily with a fork. Remove the fish from the skillet and set aside.
Making the Lemon Butter Sauce
- 3
Melt the Butter
In the same skillet used for the fish, reduce the heat to medium. Add 1 cup of unsalted butter and allow it to melt slowly.
- 4
Add Garlic and Lemon Juice
Once the butter is melted, add the minced garlic and cook for about 1 minute until fragrant. Then stir in 1 tablespoon of fresh lemon juice and the zest of 1 lemon.
- 5
Finish the Sauce
Add the chopped fresh parsley and stir to combine. Remove from heat and set aside.
Cooking the Broccolini
- 6
Prepare the Broccolini
Rinse the broccolini under cold water and trim the ends. In a separate pot, bring salted water to a boil.
- 7
Blanch the Broccolini
Add the broccolini to the boiling water and blanch for about 2-3 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop the cooking process.
- 8
Sauté the Broccolini
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the blanched broccolini and sauté for 2-3 minutes. Season with 0.5 teaspoons of salt to taste.
