Salad Preparation

    Prepare the Romaine

    Preheat your grill or grill pan over medium-high heat. While the grill is heating, wash and dry the romaine lettuce. Cut each head in half lengthwise.

    Season the Romaine

    Brush the cut sides of the romaine with olive oil and sprinkle with salt and pepper.

    Grill the Romaine

    Place the romaine halves cut side down on the grill. Grill for about 2-3 minutes until charred and slightly wilted. Remove from the grill and set aside.

Dressing Preparation

    Make the Caesar Dressing

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, Worcestershire sauce, grated Parmesan cheese, anchovy paste, and black pepper. Whisk together until smooth and well combined.

    Taste and Adjust

    Taste the dressing and adjust the seasoning with more lemon juice, salt, or black pepper as desired.

Assembly

    Assemble the Salad

    On a serving platter, place the grilled romaine halves. Drizzle with the Caesar dressing generously.

    Sprinkle the shaved Parmesan cheese, bonito flakes, and crushed croutons over the top of the dressed romaine.
