Preparation
- 1
Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the boneless chicken breasts with salt and black pepper on both sides.
- 2
Coating Process
Set up a breading station: Place flour in one shallow dish, beat the eggs in another dish, and place breadcrumbs in a third dish. Dredge each chicken breast in flour, shaking off the excess. Dip in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
Cooking
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Transfer the chicken to a baking dish.
- 4
Add Toppings
Spoon marinara sauce over each piece of chicken, then sprinkle with grated Parmigiano-Reggiano cheese and top with slices of provolone cheese.
- 5
Bake
Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden, and the chicken is cooked through (internal temperature should reach 165°F/74°C).
- 6
Serve
Remove from the oven, let cool slightly, and garnish with fresh basil before serving.
