Preparing the Cedar Plank Fish

Soak the Cedar Plank
Submerge the cedar plank in water for at least 1 hour to prevent burning while cooking.

Preheat the Grill
Preheat your grill to medium-high heat, about 375°F (190°C).

Prepare the Fish
Pat the fish fillets dry with paper towels and season with salt and pepper.

Spread Pesto
Spread a generous layer of pesto sauce on top of each fish fillet.

Arrange Tomatoes
Halve the cherry tomatoes and scatter them over the fish fillets.

Place on Cedar Plank
Carefully place the soaked cedar plank on the grill grates. Once hot, place the fish fillets on the plank.

Drizzle Balsamic Reduction
Drizzle balsamic reduction over the fish and tomatoes.

Prepare Potatoes
Peel and chop the potatoes into even-sized chunks.

Add butter, heavy cream, salt, and pepper to the potatoes. Mash using a potato masher until smooth and creamy.
