Calamari Preparation

Prepare the Calamari
In a large bowl, combine the cleaned and sliced calamari with salt and black pepper. Toss to coat evenly.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first, the beaten eggs in the second, and the breadcrumbs in the third.

Bread the Calamari
Dredge each calamari ring in flour, shaking off the excess. Dip it into the beaten eggs, then coat it with breadcrumbs, pressing gently to adhere.

Heat Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, fry the breaded calamari rings for 2-3 minutes or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally.

Remove from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
