Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and let cool.

Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until well combined. Add sour cream and vanilla extract, mixing until smooth. Add eggs one at a time, mixing on low speed until just combined. Pour the cheesecake filling over the cooled crust.

Bake the Cheesecake
Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set and the edges are slightly puffed. Once done, turn off the oven and leave the cheesecake inside for 1 hour. Then remove and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

Prepare the Chocolate Fudge Layer
In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until melted and smooth. Pour over the chilled cheesecake and spread evenly.

Once the fudge layer is set, sprinkle chopped pecans on top and drizzle with caramel sauce. Lightly sprinkle sea salt over the top for added flavor.
