    Make the Pastry Dough

    In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Divide into two disks, wrap in plastic, and refrigerate for at least 1 hour.

    Prepare the Pastries

    Preheat the oven to 400°F (200°C). Roll out one disk of dough on a floured surface to about 1/8 inch thick. Cut into desired shapes (e.g., circles, squares). Fill with your choice of fillings such as fruit preserves, chocolate, or cheese.

    Place the filled pastries on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown. Allow to cool before serving.
