    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.

    Make the cheesecake filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar and mix until combined. Mix in the sour cream and vanilla extract. Add the eggs one at a time, mixing well after each addition. Finally, fold in the melted chocolate until fully incorporated.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

    Chill the cheesecake

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover and refrigerate for at least 4 hours, preferably overnight.

    Add the topping

    Before serving, drizzle the caramel sauce over the top of the cheesecake and sprinkle with the toasted pecans.
