Prepare the Catfish and Shrimp
In a bowl, combine buttermilk, salt, and black pepper. Soak the catfish filets in the buttermilk mixture for at least 30 minutes. For the shrimp, season with cajun seasoning.

Prepare the Breading
In a separate bowl, mix the all-purpose flour, cornmeal, and remaining cajun seasoning.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge in the flour-cornmeal mixture until evenly coated. Carefully place in the hot oil and fry for about 4-5 minutes per side, or until golden brown. Remove and drain on paper towels.

Fry the Shrimp
In the same manner, dredge the seasoned shrimp in the flour-cornmeal mixture and fry in the hot oil for about 2-3 minutes until they turn golden and crispy. Remove and drain on paper towels.

Serve the crispy catfish and shrimp with hot french fries on the side.
