Make the Crab Cake Mixture
In a large bowl, combine the crab meat, bread crumbs, mayonnaise, Dijon mustard, Worcestershire sauce, egg, green onions, Old Bay seasoning, salt, and black pepper. Mix gently until combined.

Form the Crab Cakes
Using your hands, form the mixture into patties, about 3-4 inches in diameter. Place them on a baking sheet lined with parchment paper.

Chill the Cakes
Cover the patties with plastic wrap and refrigerate for at least 30 minutes to help them hold together while cooking.

Cook the Crab Cakes
In a large skillet, heat the olive oil over medium heat. Add the crab cakes in batches and cook for about 4-5 minutes on each side, or until golden brown and heated through.

Serve the crab cakes hot with French fries and tartar sauce on the side.
