Wash and slice the zucchini, bell peppers, and red onion. Cut the Mahi Mahi fillets into skewered-sized pieces.

Rub Cajun seasoning over the Mahi Mahi pieces and set aside for about 15 minutes to absorb flavors.

Cook the Rice Pilaf
In a saucepan, combine the rice, vegetable broth (or water), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is fluffy and the liquid is absorbed.

On a preheated grill, cook the seasoned Mahi Mahi pieces for about 3-4 minutes on each side, or until fully cooked and flaky.
