    Wash and slice the zucchini, bell peppers, and red onion. Cut the Mahi Mahi fillets into skewered-sized pieces.

    Rub Cajun seasoning over the Mahi Mahi pieces and set aside for about 15 minutes to absorb flavors.

    Cook the Rice Pilaf

    In a saucepan, combine the rice, vegetable broth (or water), and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is fluffy and the liquid is absorbed.

    Toss the zucchini, bell peppers, and red onion slices with olive oil, salt, and black pepper. Grill over medium heat until tender and slightly charred, about 5-7 minutes.
