    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half if they are large.

    In a large bowl, toss the Brussels sprouts with olive oil, garlic powder, salt, and black pepper until evenly coated. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are crispy and caramelized, stirring halfway through.

    Make the Honey Mustard Dressing

    While the Brussels sprouts are roasting, whisk together the balsamic vinegar, honey, and Dijon mustard in a small bowl until well combined.

    Once the Brussels sprouts are done roasting, remove them from the oven and drizzle the honey mustard dressing over them. Toss to combine and serve warm.
