Prepare the Baked Potato
Preheat your oven to 425°F (220°C). Scrub the potato clean, then poke several holes in it with a fork. Rub the potato with olive oil and sprinkle with salt. Place it directly on the oven rack and bake for about 45-60 minutes, or until the skin is crispy and the inside is soft.

Season the Rib Eye Steak
While the potato is baking, take the rib eye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Rub both sides of the steak with olive oil, salt, and black pepper.

Grill the Steak
Preheat your grill to high heat. Once hot, place the rib eye steak on the grill. Grill for about 4-5 minutes on each side for medium-rare, adjusting the time according to your desired doneness. Use a meat thermometer to check for doneness (130°F for medium-rare).

Once the potato is done, remove it from the oven and let it cool for a few minutes. Cut it open and add butter, sour cream, and chives.
