Pork Belly Preparation

    Marinate the Pork

    Combine soy sauce, mirin, sugar, crushed garlic cloves, and ginger in a bowl. Add pork belly and marinate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the oven to 160°C (320°F). Place the marinated pork belly in a roasting pan and cover with foil. Roast for 2 hours until tender. Let cool and slice.

HMK Dumplings Preparation

    Prepare Filling

    In a bowl, mix ground pork, chopped green onions, minced garlic, ginger, soy sauce, sesame oil, and salt until well combined.

    Assemble Dumplings

    Place a spoonful of filling in the center of each wonton wrapper. Moisten edges with water, fold over, and pinch to seal. Repeat until all wrappers are filled.

    Cook Dumplings

    Boil a large pot of water. Cook dumplings in batches for about 4-5 minutes or until they float. Remove and set aside.

Rich Sesame Broth Preparation

    Make the Broth

    In a large pot, combine chicken stock, sesame paste, soy sauce, miso paste, and mirin. Bring to a simmer and stir until everything is well blended. Adjust seasoning with chili oil and salt as needed.

Assembly

    Serve the Ramen

    In a bowl, ladle the rich sesame broth. Add cooked noodles, slices of pork belly, dumplings, soft-boiled eggs, nori, chopped green onions, and sesame seeds. Enjoy!
