Prepare Sashimi

Slice the Fish

Using a sharp knife, slice the Big Eye Tuna, Salmon, and Japanese Hamachi into thin, sashimi-style pieces. Arrange neatly on a serving platter.

Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix with rice vinegar, sugar, and salt while the rice is still warm.

Prepare the Roll

Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Add sliced cucumber, avocado, and imitation crab in the center. Roll tightly and seal the edge with a little water. Repeat with the second nori sheet.

Slice the Rolls

Using a sharp knife, slice the rolls into bite-sized pieces. Arrange on a serving platter.

Garnish and Serve

Serve the sashimi alongside the California rolls. Garnish with soy sauce, wasabi, and pickled ginger as desired.
