Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour the mixture over the warm rice and gently fold to combine. Let it cool to room temperature.
Prepare Toppings

Prepare Ahi and Hamachi
Dice the ahi tuna and hamachi into bite-sized pieces. Set aside.

Prepare Avocado
Slice the avocado in half, remove the pit, and dice the flesh. Set aside.
Make Roasted Garlic Soy Dressing

Mix the Dressing
In a small bowl, whisk together soy sauce, minced roasted garlic, sesame oil, and lime juice. Stir in black sesame seeds.
Assemble the Poke Bowl

Build the Bowl
In a serving bowl, start with a base of seasoned sushi rice. Top with diced ahi, hamachi, avocado, and seaweed salad. Drizzle with roasted garlic soy dressing and garnish with chopped green onions.
