Preparing Beef Short Rib

    Marinate the Short Ribs

    In a mixing bowl, combine honey, Dijon mustard, minced garlic, soy sauce, salt, and black pepper. Add the beef short ribs and coat well. Marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Short Ribs

    Preheat the oven to 300°F (150°C). Heat olive oil in a large oven-safe pot over medium-high heat. Sear the short ribs on all sides until browned. Cover and transfer to the oven, cooking for about 3 hours or until tender.

Preparing Macadamia Nut Local Catch

    Prepare the Fish

    Season the local fish fillets with salt and black pepper. Dip each fillet in melted butter and then coat with crushed macadamia nuts.

    Cook the Fish

    In a large skillet, melt remaining butter over medium heat. Add the macadamia-coated fillets and cook for 3-4 minutes per side or until cooked through and golden brown. Drizzle with lemon juice before serving.

    In a saucepan, heat the beef natural jus until warm. Adjust seasoning with salt and pepper as needed.
