    Marinate the Tuna

    In a bowl, mix soy sauce, sesame oil, sriracha, green onions, sesame seeds, salt, and black pepper. Add the Ahi tuna steak, ensuring it's fully coated. Let it marinate for at least 15 minutes.

    Sear the Tuna

    Heat a skillet over medium-high heat. Add a bit of oil and sear the marinated Ahi tuna for about 1-2 minutes on each side, depending on your preference for doneness. Remove from heat and let rest before slicing.

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Cut the potatoes into fries and soak them in water for about 30 minutes to remove excess starch. Drain and pat dry.

    Season and Bake the Fries

    In a large bowl, toss the dried potato fries with olive oil, paprika, garlic powder, and salt. Spread them in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
