    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and crisp up the fries.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry and Fry the Potatoes

    Drain the soaked fries and pat them dry with paper towels. Fry them in batches in the hot oil for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

    Season the Fries

    While still hot, drizzle the truffle oil over the fries and toss to coat. Add the grated Parmesan cheese, salt, and pepper to taste.

    Garnish and Serve

    If desired, garnish with chopped fresh parsley. Serve immediately while hot.
