Prepare the Dough
In a large bowl, combine the flour, ricotta cheese, cream cheese, Parmesan cheese, eggs, salt, and black pepper. Mix until a smooth dough forms.

Shape the Dumplings
Take small portions of the dough and shape them into small balls or dumplings. Place them on a floured surface.

Boil the Dumplings
Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water and cook for about 5-7 minutes or until they float to the surface. Remove with a slotted spoon and set aside.
Salsa Verde Butter

Make the Salsa Verde Butter
In a small saucepan, melt the unsalted butter over low heat. Stir in the chopped parsley, cilantro, minced garlic, lemon juice, and salt. Cook for 2-3 minutes until fragrant. Remove from heat and set aside.
Soy Balsamic Ratatouille

Cook the Ratatouille
In a large skillet, heat olive oil over medium heat. Add the diced onion and cook until translucent. Then add the zucchini, bell pepper, eggplant, and tomato. Sauté for about 10 minutes until the vegetables are tender. Stir in the soy sauce, balsamic vinegar, and herbs de Provence. Cook for an additional 5 minutes.
