Tofu

Method

Prepare Tofu

    Marinate Tofu

    Press the tofu to remove excess moisture, then cut it into thin slices. In a bowl, combine minced garlic, soy sauce, olive oil, salt, and black pepper. Marinate the tofu slices in this mixture for at least 30 minutes.

    Cook Tofu

    Heat a non-stick skillet over medium heat. Add the marinated tofu slices and cook for about 5-7 minutes on each side or until golden brown.

Make Vegetable Escabeche

    Pickle Vegetables

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil. Add the julienned carrots, red bell pepper, and red onion. Remove from heat and let cool. Refrigerate for at least 1 hour before using.

Make Soy Gingerette

    Prepare Sauce

    In a small bowl, mix together soy sauce, grated ginger, and sesame oil. Set aside.

Assemble Rolls

    Roll It Up

    Cook sushi rice according to package instructions. Lay a nori sheet on a bamboo mat, spread a thin layer of sushi rice over it, leaving a small edge at the top. Place cooked tofu, vegetable escabeche, and avocado slices on top of the rice. Roll tightly and slice into pieces. Repeat with remaining ingredients.

    Serve

    Serve the rolls with soy sauce and sprinkle with sesame seeds if desired. Enjoy your Tofu-Licious Roll!
