Preparing the Ribs

    Season the Ribs

    Preheat your grill to medium heat. In a small bowl, mix the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the baby back ribs.

    Grill the Ribs

    Place the ribs on the grill, bone side down. Grill for about 2 hours, turning every 30 minutes, until they are tender and have a nice char.

Making Mongolian BBQ Sauce

    Prepare the Sauce

    In a saucepan, combine the soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, crushed Szechuan peppercorns, and chili flakes. Bring to a boil over medium heat, then reduce to low and simmer for about 10 minutes until thickened.

Finishing Touches

    Glaze the Ribs

    During the last 15 minutes of grilling, brush the Mongolian BBQ sauce generously over the ribs. Allow them to caramelize on the grill.

    Serve

    Once cooked, remove the ribs from the grill, let them rest for a few minutes, then slice and serve with extra Mongolian BBQ sauce and chopped green onions on top.
