Method

Preparing the Ribs

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Prepare Ribs

    Rinse the baby back ribs under cold water and pat dry with paper towels.

    Season Ribs

    Rub the ribs with salt, black pepper, garlic powder, and onion powder evenly on both sides.

    Cover Ribs

    Place the ribs on a baking sheet lined with aluminum foil. Cover the ribs tightly with another piece of foil.

    Bake Ribs

    Bake in the preheated oven for 2.5 to 3 hours, until the ribs are tender.

Making the Mongolian BBQ Sauce

    Combine Sauce Ingredients

    In a saucepan, combine soy sauce, hoisin sauce, rice vinegar, brown sugar, sesame oil, Szechuan peppercorns, chili paste, grated ginger, and minced garlic.

    Cook Sauce

    Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 10-15 minutes, stirring occasionally until thickened.

Finishing the Ribs

    Uncover Ribs

    Once the ribs are done baking, remove them from the oven and discard the top layer of foil.

    Glaze Ribs

    Brush a generous amount of the Mongolian BBQ sauce over the ribs and return to the oven uncovered. Bake for an additional 15-20 minutes until the sauce is caramelized.

    Rest and Serve

    Remove from the oven, let them rest for a few minutes, then cut into portions.

    Garnish with chopped chives before serving.
