Preparing the Ribs

Season the Ribs
Preheat your oven to 300°F (150°C). Pat the baby back ribs dry with paper towels, then rub them with salt, black pepper, garlic powder, onion powder, and paprika. Ensure an even coating on both sides.

Wrap and Bake
Wrap the seasoned ribs tightly in aluminum foil and place them on a baking sheet. Bake in the preheated oven for about 2.5 hours, until tender.
Making the Szechuan Sauce

Combine Ingredients
In a saucepan over medium heat, combine soy sauce, rice vinegar, Szechuan peppercorns, brown sugar, minced garlic, minced ginger, chili paste, and sesame oil. Stir well and bring to a simmer.

Simmer the Sauce
Allow the sauce to simmer for about 10 minutes, stirring occasionally until it thickens slightly.
Finishing the Ribs

Glaze the Ribs
After baking, remove the ribs from the oven and carefully unwrap them. Brush the Szechuan sauce generously over the ribs.

Broil
Place the ribs under the broiler for about 5-7 minutes, until the sauce caramelizes slightly.

Sprinkle sesame seeds and chopped chives over the ribs before slicing and serving.
