Soup Preparation

    Caramelize Onions and Leeks

    In a large pot over medium heat, melt the butter. Add the sweet onions and leeks, stirring occasionally. Cook for about 20-25 minutes until the onions and leeks are caramelized and golden brown.

    Add Garlic and Herbs

    Add minced garlic, thyme, bay leaf, salt, and black pepper to the pot. Stir and cook for another 2-3 minutes until fragrant.

    Add Chicken Stock

    Pour in the chicken stock and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 30 minutes.

Toast Preparation

    Prepare Pumpernickel Toasts

    While the soup is simmering, preheat the oven to 375°F (190°C). Brush the pumpernickel slices with olive oil and place them on a baking sheet. Bake for about 10 minutes until crispy and golden.

Serving

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls and top with a generous amount of Big Kid Goat Dairy Valencey cheese. Serve with the pumpernickel toasts on the side.
