Crust Preparation

    Make the Oreo Crust

    Preheat your oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs and mix them with melted butter in a bowl until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes and then let it cool.

    Prepare the Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, sour cream, and vanilla extract, mixing until well incorporated. Add the eggs one at a time, mixing well after each addition. Fold in the fresh strawberries until evenly distributed.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled Oreo crust in the springform pan. Bake in the preheated oven for 55-60 minutes or until the edges are set but the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours, preferably overnight.

    Serve the Cheesecake

    Once chilled, remove the cheesecake from the springform pan. Drizzle the caramel sauce over the top and garnish with chocolate truffles. Slice and serve cold.
