Broth Preparation

Prepare the Broth

In a large pot, add water, lemongrass, galangal, kaffir lime leaves, bird's eye chili, fish sauce, lime juice, and sugar. Bring to a boil over high heat.

Simmer

Reduce the heat and let the broth simmer for about 15 minutes to allow the flavors to meld.

Strain the Broth

After simmering, strain the broth through a fine mesh sieve to remove the solids, returning the liquid to the pot.

Cooking the Clams

Add Clams

Add the cleaned clams to the pot with the broth and bring back to a simmer.

Add Inoki Mushrooms

Once the clams start to open (about 5-7 minutes), add the inoki mushrooms and simmer for an additional 2-3 minutes.

Garnish

Remove from heat and garnish with chopped cilantro and sliced green onions before serving.
