Cheesecake Base

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.

Cheesecake Filling

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Add sugar, sour cream, and vanilla extract, mixing until combined. Add eggs one at a time, mixing on low speed after each addition. Fold in mini chocolate chips.

    Bake the cheesecake

    Pour the cheesecake filling over the cooled crust. Bake at 325°F (160°C) for 50-60 minutes or until the center is set. Allow it to cool completely, then refrigerate for at least 4 hours.

Chocolate Dipped Banana

    Dip the bananas

    Melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring until smooth. Dip each banana slice into the chocolate and place on a parchment-lined tray. Freeze for 30 minutes until set.

    Prepare the marshmallow

    In a saucepan, combine sugar, corn syrup, and water. Bring to a boil. In a mixing bowl, bloom gelatin in cold water. Once the sugar mixture reaches 240°F (115°C), pour it into the gelatin while mixing on high speed until fluffy and cooled. Add vanilla and mix well. Spread in a greased pan and let set for at least 4 hours.
