Method

Noodle Preparation

    Cook the Noodles

    Bring a pot of salted water to a boil. Add the cha soba noodles and cook according to package instructions, usually around 4-5 minutes. Drain and rinse under cold water to stop the cooking process.

Tsukemono Preparation

    Pickle the Vegetables

    In a bowl, combine rice vinegar, sugar, and salt. Stir until sugar and salt are dissolved. Add the cucumber and carrot, ensuring they are submerged. Let sit for at least 30 minutes.

Tosazu Dressing

    Make the Dressing

    In a small saucepan, combine dashi stock, soy sauce, rice vinegar, and mirin. Heat gently until warmed, then set aside to cool.

Assembly

    Assemble the Dish

    In a serving bowl, place the chilled cha soba noodles. Top with smoked salmon, tsukemono, ikura, and drizzle with tosazu dressing. Garnish with chopped scallions and toasted sesame seeds.
