Beef Short Ribs Preparation

    Marinate the Ribs

    In a bowl, mix honey, Dijon mustard, soy sauce, minced garlic, black pepper, and salt. Coat the beef short ribs with the marinade and let it sit for at least 2 hours, preferably overnight.

    Sear the Ribs

    Heat olive oil in a heavy pot over medium-high heat. Add the marinated short ribs and sear on all sides until browned. Remove the ribs and set aside.

    Braise the Ribs

    In the same pot, add beef broth and bring to a simmer. Return the ribs to the pot, cover, and reduce heat to low. Braise for 3 hours or until the meat is tender.

Potatoes Au Gratin Preparation

    Prepare the Potatoes

    Preheat the oven to 180°C (350°F). Thinly slice the potatoes and layer half of them in a greased baking dish.

    Add Cream and Cheese

    In a bowl, combine heavy cream, garlic powder, salt, and pepper. Pour half of the cream mixture over the first layer of potatoes. Sprinkle with half of the cheddar cheese. Repeat with the remaining potatoes, cream, and cheese.

    Bake

    Dot the top with butter and cover with foil. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes or until golden and bubbling.

Natural Jus Preparation

    Make the Jus

    In a saucepan, combine beef broth and red wine. Simmer over medium heat until reduced by half. Stir in fresh thyme, adjusting seasoning with salt and pepper to taste.
