Beef Short Ribs

    Sear the Beef

    Preheat the oven to 300°F (150°C). Season the beef short ribs with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté for about 5 minutes until the vegetables are softened.

    Add Liquids and Braise

    Add beef broth, honey, Dijon mustard, apple cider vinegar, and fresh thyme to the pot. Stir to combine, then return the short ribs to the pot. Cover and braise in the oven for 3 hours until tender.

Pommes Puree

    Cook Potatoes

    Boil the peeled and chopped potatoes in salted water until tender, about 20 minutes. Drain well.

    Make Puree

    In a bowl, combine the potatoes with heavy cream, butter, and salt. Mash until smooth and creamy. Adjust seasoning as necessary.

Lomi Tomatoes

    Prepare the Lomi Tomatoes

    In a bowl, combine diced roma tomatoes, chopped green onions, lime juice, and salt. Mix well and let sit for 10 minutes to allow flavors to meld.
