Pasta Preparation

    Make the Fettuccini

    In a mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Pasta

    After resting, divide the dough into 4 pieces. Roll each piece out with a pasta machine or a rolling pin to your desired thickness. Cut into fettuccini strips. Dust with flour and set aside.

Shrimp Scampi Preparation

    Cook the Shrimp

    In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the shrimp and cook until they turn pink, about 2-3 minutes per side.

    Add Wine and Tomatoes

    Pour in the white wine and lemon juice, scraping the bottom of the skillet to deglaze. Add the diced Ho Farm tomatoes, salt, and pepper. Simmer for about 5 minutes until the sauce reduces slightly.

    Combine with Pasta

    In a large pot of salted boiling water, cook the fettuccini for 2-3 minutes until al dente. Drain and add the pasta to the skillet with the shrimp and sauce. Toss to combine and cook for another 1-2 minutes.

    Serve

    Garnish with fresh parsley and serve immediately.
