Cooking Instructions

  1. 1

    Prepare the Broth

In a saucepan, heat the vegetable or chicken broth over low heat to keep it warm.

  2. 2

    Cook the Bacon

In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove bacon and set aside, leaving the drippings in the pan.

  3. 3

    Sauté Vegetables

In the same skillet, add the chopped onion and garlic to the bacon drippings. Sauté until the onion is translucent. Add the sliced mushrooms and cook until softened.

  4. 4

    Add Rice and Toast

Stir in the Arborio rice and cook for about 2 minutes, stirring constantly until the rice is lightly toasted.

  5. 5

    Incorporate Broth Gradually

Begin adding the warm broth one ladle at a time to the rice, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process until the rice is creamy and al dente (about 18-20 minutes).

  6. 6

    Add Shrimp and Other Ingredients

When the rice is almost done, stir in the shrimp, sundried tomatoes, spinach, and cooked bacon. Cook until the shrimp are pink and cooked through.

  7. 7

    Finish with Cheese

Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste. Garnish with fresh parsley.

  8. 8

    Serve

Serve the risotto warm, garnished with additional Parmesan cheese and parsley if desired.
