Salmon Tartare

Method

Preparation

  1. 1

    Prepare the Salmon

Remove the skin from the salmon fillet, and finely dice the flesh into small cubes. Place in a mixing bowl.

  2. 2

    Make the Red Onion-Dill Compote

In a separate bowl, combine the finely diced red onion, chopped dill, and a pinch of sea salt. Mix well and let it sit for about 10 minutes to allow the flavors to meld.

  3. 3

    Make the Caper Lemonette

In another bowl, whisk together the chopped capers, lemon juice, olive oil, sea salt, and black pepper until well combined.

  4. 4

    Combine Ingredients

Add the red onion-dill compote to the diced salmon and mix gently to combine. Adjust seasoning with additional salt and pepper if needed.

  5. 5

    Plate the Tartare

Using a ring mold, carefully layer the salmon mixture on a plate. Drizzle with the caper lemonette before serving.

  6. 6

    Serve

Serve immediately, garnished with additional dill if desired.
