    Prepare the Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the red Thai curry paste and sauté for 1-2 minutes until fragrant. Pour in the coconut milk and lime juice, stirring well to combine. Bring the mixture to a simmer and let it cook for about 5 minutes. Stir in half of the chopped cilantro and season with salt and pepper. Remove from heat and set aside.

    Sear the Fish

    Pat the fish fillets dry with a paper towel and season both sides with salt and pepper. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Once the oil is hot, add the fish fillets and sear for about 4-5 minutes on each side, or until golden brown and cooked through.

    Serve

    Place the seared fish on plates and drizzle with the red Thai curry sauce. Garnish with the remaining cilantro. Serve immediately.
