Sizzling Serrano Ginger Vinaigrette

Preparation

    Prepare the Vegetables

    Blanch the Choi Sum in boiling water for 1-2 minutes until tender, then transfer to an ice bath. Drain and set aside. For the oden vegetables, steam or simmer them until cooked but still firm.

    Make the Vinaigrette

    In a small bowl, whisk together the minced serrano pepper, ginger, soy sauce, rice vinegar, sesame oil, and honey. Set aside.

Cooking

    Sear the Fish

    Season the fish fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Add the fish and sear for about 3-4 minutes on each side, or until golden brown and cooked through.

Assembly

    Plate the Dish

    On a plate, arrange the blanched Choi Sum and oden vegetables. Top with the seared fish fillet and drizzle the sizzling serrano ginger vinaigrette over the top.
