Fire Roasted Tomato Sauce

    Prepare the Sauce

    In a saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

    Add Tomatoes and Seasonings

    Add fire roasted tomatoes, basil, oregano, salt, pepper, and sugar. Bring to a simmer and let it cook for 15-20 minutes, stirring occasionally.

Mushroom Duxelle

    Sauté Mushrooms and Shallots

    In a skillet, melt butter over medium heat. Add minced shallots and sauté for 2-3 minutes. Add the finely chopped mushrooms and cook until the moisture evaporates, about 10 minutes.

    Season and Finish Duxelle

    Stir in thyme, salt, and pepper. Cook for an additional 2-3 minutes and then remove from heat.

Seared Fish

    Sear the Fish

    Season the fish fillets with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Sear the fish for about 4-5 minutes on each side, or until golden brown and cooked through.

Assembly

    Plate the Dish

    On a serving plate, spoon a generous amount of fire roasted tomato sauce. Place the seared fish on top and add a scoop of mushroom duxelle beside it.
