Preparation of Ribs

    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Rub the baby back ribs with salt and black pepper. Place them on a baking sheet lined with aluminum foil.

    Bake the Ribs

    Cover the ribs with another piece of aluminum foil and bake in the preheated oven for 2.5 to 3 hours, until tender.

Making the Sauce

    Prepare the Sauce

    In a saucepan over medium heat, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, minced ginger, Szechuan peppercorns, and red chili flakes. Bring to a simmer and cook for 10-15 minutes until the sauce thickens slightly.

Finishing the Ribs

    Glaze and Broil

    Remove the ribs from the oven and discard the top layer of foil. Brush the Mongolian BBQ sauce generously over the ribs. Set your oven to broil and place the ribs back in for an additional 5-10 minutes, until the sauce caramelizes.

    Remove from the oven, let rest for a few minutes, then sprinkle with chopped chives before slicing and serving.
