Chocolate Souffle

    Prepare the Chocolate

    Preheat the oven to 375°F (190°C). Melt the semisweet chocolate and butter together in a double boiler, stirring until smooth. Remove from heat and let cool slightly.

    Mix Egg Yolks

    In a separate bowl, whisk together the egg yolks and half of the granulated sugar until pale and thick. Stir in the melted chocolate mixture and vanilla extract.

    Beat Egg Whites

    In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.

    Fold Mixtures

    Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Bake

    Grease ramekins with butter and dust with sugar. Pour the soufflé mixture into the ramekins and bake for 12-15 minutes until puffed and set. Do not open the oven door during baking.

Raspberry Coulis

    Make the Coulis

    In a blender, combine the fresh raspberries, sugar, and lemon juice. Blend until smooth and strain through a fine-mesh sieve to remove seeds.

    Drizzle the raspberry coulis over the warm chocolate soufflé before serving.
