Marinate the Ribs
In a large bowl, combine soy sauce, Szechuan peppercorns, brown sugar, minced garlic, minced ginger, rice vinegar, sesame oil, chili paste, and black pepper. Mix well to create a marinade. Add the pork ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Preheat and Smoke
Preheat your smoker to 225°F (107°C). Remove the ribs from the marinade and let them come to room temperature for about 30 minutes. Discard the marinade.

Smoke the Ribs
Place the ribs in the smoker and smoke for about 4-5 hours or until the meat is tender and pulls easily from the bone. Make sure to maintain the temperature throughout the smoking process.
Serving

Garnish and Serve
Once cooked, remove the ribs from the smoker and let them rest for 10 minutes. Slice the ribs and garnish with chopped chives and toasted sesame seeds before serving.
