Meatloaf

Hamakua Mushroom Gravy

Method

Meatloaf

  1. 1

    Prepare the Meatloaf

Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, onion, garlic, bread crumbs, egg, milk, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined.

  2. 2

    Shape and Bake

Transfer the mixture to a loaf pan and shape into a loaf. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).

Yukon Mash

  1. 3

    Cook the Potatoes

In a large pot, boil Yukon Gold potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 4

    Mash and Season

Add butter, heavy cream, salt, and pepper to the potatoes. Mash until creamy and smooth.

Hamakua Mushroom Gravy

  1. 5

    Sauté the Mushrooms

In a skillet, melt butter over medium heat. Add sliced mushrooms and sauté until browned, about 5-7 minutes.

  2. 6

    Make the Gravy

Sprinkle flour over the mushrooms and stir for 1 minute. Slowly whisk in beef broth and soy sauce. Cook until thickened, about 3-5 minutes. Season with black pepper.

Onion Rings

  1. 7

    Prepare the Batter

In a bowl, mix flour, cornstarch, baking powder, salt, and cold water until smooth.

  2. 8

    Fry the Onion Rings

Heat oil in a deep fryer or large pot. Dip onion rings in the batter and fry until golden brown, about 2-3 minutes. Drain on paper towels.
