Method
Prepare the Blackened Ahi

Season the Tuna
In a small bowl, mix paprika, cayenne pepper, black pepper, and sea salt. Rub the spice mixture evenly over each ahi tuna steak.

Make the Soy Mustard Sauce

Combine Ingredients
In a small bowl, whisk together soy sauce, Dijon mustard, honey, and sesame oil until smooth. Set aside.
Prepare the Chilled Soba Hijiki Noodles

Cook the Noodles
Cook the soba noodles according to package instructions. Drain and rinse under cold water to cool down.

Prepare Vegetables
Soak hijiki seaweed in water for 10 minutes, then drain. In a bowl, combine cooled soba noodles, hijiki, cucumber, carrot, sesame seeds, and green onions.

Dress the Noodles
Drizzle rice vinegar, soy sauce, and sesame oil over the noodle mixture and toss to combine.
Serve

Plate the Dish
On a plate, serve a portion of the chilled soba hijiki noodles and top with the sliced blackened ahi. Drizzle the soy mustard sauce over the tuna and noodles.
