    Roasting the Tomatoes

    Preheat your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Roast in the oven for 25-30 minutes, or until caramelized.

    Sautéing the Vegetables

    In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

    Combining Ingredients

    Once the tomatoes are roasted, add them to the pot along with the vegetable broth. Bring to a simmer and let cook for 10 minutes to meld the flavors.

    Blending the Bisque

    Remove the pot from heat and use an immersion blender to purée the soup until smooth. If you do not have an immersion blender, carefully transfer to a blender in batches.

    Finishing Touches

    Return the bisque to low heat, stir in the heavy cream and fresh basil. Season with additional salt and pepper to taste. Heat through and serve warm.
