Prime Rib Preparation

    Season the Prime Rib

    Rub the prime rib with olive oil, then generously season it with salt, black pepper, garlic powder, and fresh rosemary. Let it sit at room temperature for at least 1 hour.

    Roast the Prime Rib

    Preheat the oven to 450°F (232°C). Place the seasoned prime rib on a rack in a roasting pan. Roast for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours. Let it rest for 20-30 minutes before slicing.

    Prepare the Jus

    In a large pot, roast the beef bones in the oven at 400°F (204°C) for 30 minutes. Transfer to a pot and add onion, carrots, celery, red wine, water, and thyme. Simmer for 4-5 hours, skimming off the fat. Strain and reduce to desired consistency.

Potato Gratin Preparation

    Prepare the Gratin

    Preheat the oven to 375°F (190°C). In a greased baking dish, layer the sliced potatoes, seasoning each layer with salt, black pepper, minced garlic, and Gruyère cheese. Pour heavy cream over the top. Bake for 1 hour or until the potatoes are tender and the top is golden brown.

    Roast the Beans

    Toss the haricot vert and sliced shallots with olive oil, salt, and black pepper. Spread on a baking sheet and roast in the oven at 400°F (204°C) for 15-20 minutes until tender and slightly caramelized.
